If you’re a chocolate enthusiast, you’ve come to the right place! Our triple chocolate protein muffins are not only incredibly tasty but also packed with protein, making them an excellent choice for a nutritious snack or a quick breakfast on the go.

Triple Chocolate Protein Muffins

Ingredients:

  • 1/4 cup honey
  • 1/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 3 eggs, room temperature
  • 2 tsp vanilla extract
  • 1/4 cup Greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup Now Foods Chocolate Whey Protein
  • 2 cups almond flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips (We love Enjoy Life Dark Chocolate Morsels)

Directions:

  1. Preheat oven to 350 degrees F and line a muffin tin.
  2. In a bowl, combine honey, coconut sugar, and coconut oil. Whisk in the eggs for 30-60 seconds.
  3. Add the vanilla and yogurt and stir until smooth.
  4. Slowly mix in the cocoa powder, whey protein, almond flour, baking powder, baking soda, and salt. Gently fold in the chocolate chips.
  5. Add the batter to the lined muffin tins. Make sure to add a few extra chocolate chips on top!
  6. Bake for 16-19 minutes or until the muffin bottoms have set. Let sit for a few minutes once out of the oven and enjoy!
