Today on The Fruitful Life, we wanted to share a simple yet delicious paleo recipe for peanut butter cookies! If you're new to baking, new to paleo, short on time (or just really love peanut butter), then this is the paleo recipe for you. These paleo cookies are chewy, moist, and can be modified with so many additional ingredients, like decadent chocolate chips or a few dashes of pumpkin pie spice!

4-Ingredient Paleo Peanut Butter Cookies

Ingredients:

1 cup peanut butter (we love Once Again Organic Creamy Peanut Butter)

½ cup sugar (we prefer Now Foods Coconut Sugar)

2-4 tbsp almond flour

1 large egg

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.
  2. In a bowl, mix the egg, peanut butter, and sugar together until fully blended.
  3. Add the almond flour 1 tbsp at a time, stirring until the dough is combined and easy to roll into balls. (We normally use 2 tbsp almond flour for extra moist cookies!)
  4. Roll the dough into balls and line on the cookie sheet, pressing down on them slightly to flatten. Using a fork, press into the cookies, once in a horizontal line and once in a vertical line. It should resemble a cross pattern in the end.
  5. Bake for 12-16 minutes. For extra chewy, melt-in-your-mouth cookies, bake for less time. For those who like a firmer bite, leave them in the oven a little longer until the edges of the cookies brown.
  6. Enjoy!!
  7. A few ways we like to spice up this recipe is by simply sprinkling flaky salt on top or by spreading a generous amount of jam on top for a classic PB&J flavor!
