Ingredients
1 Cup organic, virgin coconut oil
1 Cup organic turbinado sugar
1 Cup brown sugar
2 large eggs
2 teaspoons organic vanilla extract
1 Cup Organic Golden Berries
2 Cups all-purpose flour
1 Cup organic rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sea salt
Directions
1. Preheat oven to 350 degrees and line cookie sheet with parchment paper.
2. Combine coconut oil, turbinado sugar, and brown sugar in a mixing bowl. Beat until light and fluffy.
3. Add eggs and vanilla, and mix until batter has an even consistency.
4. In a separate bowl, combine flour, baking soda, baking powder, and salt. Add oats and golden berries.
5. Add dry ingredients to batter and mix evenly.
6. Place in freezer for at least 30 minutes.
7. After 30 minutes, remove dough and form into 1/2 inch balls.
8. Place on prepared cookie sheet and bake for 10-15 minutes or until slightly golden brown.
9. Allow to cool before serving. Enjoy!
