Lemon bars are a classic dessert combining the tart flavor of citrus with a creamy and decadent crust! Zesty Lemon Bars need lemons as a source of the lemon-y goodness!

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine the dry ingredients for the crust and then add the coconut oil and honey. Mix until smooth and clump-free.
  3. Line an 8x8 pan with parchment paper and pour the crust mixture into the pan.
  4. Bake for 15 minutes or until golden and firm. Once it has finished baking, set aside.
  5. Add the eggs or flax eggs to the bowl and whisk until blended. Then add the lemon juice and honey and stir.
  6. Add in and mix the remaining dry filling ingredients until smooth.
  7. Pour the filling mixture evenly on top of the baked crust. Place in the oven and bake for 40-50 minutes or until the filling has set.
  8. Let the pan cool for at least 30 minutes. Then, place in the refrigerator overnight. Once the bars have completely chilled in the refrigerator, they can be sliced and enjoyed!
  9. Top with a sprinkling of powdered sugar or the Vital Protein Lemon Collagen Peptides for an extra bit of lemon flavor!
