Lemon bars are a classic dessert combining the tart flavor of citrus with a creamy and decadent crust! Ingredients:
For the Crust:
- ÂĽ cup melted Now Foods Coconut Oil
- ÂĽ cup Some Honey Wildflower Honey
- 1 ½ cups Bob’s Red Mill Almond Flour
- 2 tbsp Now Foods Coconut Flour
- ÂĽ tsp Redmond Salt
- 1 scoop Vital Proteins Lemon Collagen Peptides
For the Filling:
- Zest of 2 lemons
- 2/3 cup Italian Volcano Lemon Juice
- ½ cup Some Honey Wildflower Honey
- 4 large eggs (can use 4 flax eggs in place)
- 1 tbsp Now Foods Tapioca Flour or Coconut Flour
- 1 scoop Vital Proteins Lemon Collagen Peptides
Instructions:
- Preheat oven to 350 degrees Fahrenheit.
- Combine the dry ingredients for the crust and then add the coconut oil and honey. Mix until smooth and clump-free.
- Line an 8x8 pan with parchment paper and pour the crust mixture into the pan.
- Bake for 15 minutes or until golden and firm. Once it has finished baking, set aside.
- Add the eggs or flax eggs to the bowl and whisk until blended. Then add the lemon juice and honey and stir.
- Add in and mix the remaining dry filling ingredients until smooth.
- Pour the filling mixture evenly on top of the baked crust. Place in the oven and bake for 40-50 minutes or until the filling has set.
- Let the pan cool for at least 30 minutes. Then, place in the refrigerator overnight. Once the bars have completely chilled in the refrigerator, they can be sliced and enjoyed!
- Top with a sprinkling of powdered sugar or the Vital Protein Lemon Collagen Peptides for an extra bit of lemon flavor!
